Taco Bell Bowl


Ingredients:

1 lb 99% lean ground turkey

1 packet Taco Bell taco seasoning

1 bag Trader Joe's frozen brown rice

1 bag shredded lettuce

1/2 cup cherry tomatoes

3 oz avocado

pickled red onion

Taco Bell hot sauce

Directions

  1. Cut a slit in the bag of rice and microwave for 3 min or until heated through

  2. While rice is cooking, heat a skillet over medium high. Add ground turkey. Using a spatula, break the meat into pieces and cook until browned and no longer pink

  3. Add taco seasoning and 1/3 cup water to the meat. Stir to mix evenly and cook for about 1 more minute.

  4. Chop tomatoes and avocado into bite size pieces

  5. Assemble your bowl. Layer lettuce, 1/4 of the rice, 1/4 of the meat, tomatoes, avocado, and onion. Top with Taco Bell hot sauce and whatever else you like

  6. Put the remaining meat and rice in Tupperware and store in refrigerator for up to 5 days
