Smoked Salmon Salad With Cream Cheese Dressing



4oz light cream cheese

3 Tbsp water

Juice from 1/2 of a lemon

1/8 tsp salt

1/4 tsp black pepper

Fresh dill to taste (or chives)


3 cups arugula

1/4 of a small red onion, sliced

1 small cucumber

57g smoked salmon



  1. Make dressing- put cream cheese, water, lemon, salt, pepper, and dill in a small blender. Blend well. Taste and add more salt, pepper, and dill (or chives) as desired. If too thick, add more water and blend to desired consistency

  2. Layer arugula, onion, cucumber, and salmon in a salad bowl

  3. Drizzle with 1/4 of the salad dressing and top with capers

  4. Save remaining dressing in refrigerator for up to 7 days
