Shephard's Pie Stuffed Sweet Potato


1 sweet potato, about 260g

1lb ground beef (I used 96% lean)

1 1/2 cups frozen mixed vegetables

1/4 cup vegetable broth

2 tsp Worcestershire sauce

Salt and pepper to taste

1 oz cheddar cheese


  1. Wash the sweet potato and pierce with a fork. Microwave on high for 7 minutes

  2. While sweet potato is cooking, heat a skillet over high heat. Add the ground beef and brown, about 3 minutes

  3. Drain the fat from the skillet and add the vegetables, broth, Worcestershire sauce, salt, and pepper. Let simmer for about 2 minutes

  4. Remove sweet potato from microwave. Cut it in half and scoop out about half of the flesh. Save for a separate meal. I made sweet potato muffins using this recipe-

  5. Spoon 1/4 of the beef/vegetable mixture into the sweet potato. Put remaining beef mixture in Tupperware and refrigerate for up to 5 days

  6. Top sweet potato with cheese
