Protein Pumpkin Oatmeal


1/2 cup rolled oats

92g egg whites

65g pumpkin puree

18g Trader Joe's pumpkin butter

10g candied pecans, chopped


  1. Bring 1 cup water to a boil. Add oats and cook until water is absorbed

  2. Turn heat down to low. Slowly stir in egg whites. Cook for another minute, continuing to stir, until oatmeal has a creamy texture.

  3. Stir in pumpkin puree and pumpkin butter

  4. Put in a bowl and top with pecans
