Pork Fried Rice


Ingredients:

1 package Right Rice (original flavor)

1 lb center cut pork loin, diced into small pieces

1 bag cauliflower rice

2 eggs

1 small onion, finely diced

1 tsp chopped garlic

1 large carrot, finely diced

1 cup green peas

1/2 Tbsp vegetable oil

1/2 Tbsp sesame oil

2 Tbsp low sodium soy sauce

5 scallions, diced

Directions:

  1. Heat 1 1/3 cups water in a small pot over high heat. When water starts to boil, add Right Rice, cover and remove from heat

  2. Heat a large nonstick skillet over medium high heat. Add pork and saute until cooked through. Move pork to a plate

  3. In a bowl, beat eggs plus a few drops of soy sauce and sesame oil. Put eggs in the skillet. Once the eggs are cooked through, move to a plate and chop into small pieces

  4. Heat vegetable oil and sesame oil in the skillet. Add onions and saute until translucent. Add garlic and cook for about 1 minute. Add peas, carrots, and pork and saute for 2 minutes

  5. Uncover the Right Rice and add to the skillet. Also add the cauliflower rice and soy sauce. Saute for 3 minutes, then mix in the egg and scallions

  6. Divide into 5 even portions and refrigerate for up to 7 days
