Mediterranean Bowl


2 cups arugula or other leafy green

1/2 of a bell pepper

1 small English cucumber

1 small red onion

1/2 cup cherry tomatoes

1/4 of a lemon

Salt and pepper to taste

3 Trader Joe's frozen turkey meatballs

60g tzaziki sauce


  1. Microwave meatballs for 2 minutes or until heated through

  2. Chop vegetables and assemble on plate. Squeeze lemon on vegetables and sprinkle with salt and pepper to taste

  3. Add meatballs and tzaziki
