Chicken and Cauliflower Rice Bowl


Ingredients:

1/2 bag Trader Joe's frozen cauliflower rice

3 oz Trader Joe's grilled chicken

2 tsp taco seasoning (I used Taco Bell brand)

Handful of cherry tomatoes, diced

2 Tbsp Trader Joe's Corn and Chile Salsa

2 Tbsp sour cream

Directions:

  1. Heat a large skillet over high heat. Add frozen cauliflower rice and saute until lightly browned

  2. Dice chicken and add to the skillet. Add taco seasoning and stir until combined

  3. Put cauliflower rice on a plate. Top with tomatoes, salsa, and sour cream
