Butternut Squash Noodles With Chicken and Peanut Dressing


3 oz Roast Chicken

170g Butternut Squash Spirals

2 Tbsp Trader Joe's Spicy Peanut Vinaigrette

2 Scallions

Sesame seeds (optional)


  1. Heat a skillet over medium high heat. Add butternut squash and 1/4 cup of water. Cover and cook until starting to soften, about 5 minutes

  2. While the squash is cooking, dice chicken and scallions

  3. Remove cover from the squash and add chicken. Cook until just heated through, about 1 minute

  4. Add peanut vinaigrette and cook for 1 more minute

  5. Remove from heat and put on a plate. Top with scallions and a sprinkle of sesame seeds
