Ingredients:
3 oz Trader Joe's frozen shredded potato hash browns
3 oz Trader Joe's frozen fire roasted peppers and onions
Handful of sliced baby bella mushrooms
1 tsp salt
1 tsp pepper
1/2 tsp garlic powder
1 tsp fresh thyme
1 tsp fresh rosemary
3 oz 96% lean ground beef
1 egg
1 cup baby spinach
Directions:
Heat a large nonstick skillet over medium high heat. Add potatoes, peppers and onion, and mushrooms. Season with salt, pepper, garlic powder, thyme, and rosemary. Cook undisturbed for 3 minutes. Flip the mixture and cook another 2 minutes
While potato and vegetables are cooking, heat a separate small nonstick skillet over medium high heat. Add ground beef and cook until evenly browned
Add ground beef to the skillet and cook for 1 minute on each side. Top hash with the egg. Sprinkle with more salt and pepper as desired
