BBQ Tempeh With String Beans and Potato


Ingredients:

12 oz potato

1/2 Tbsp olive oil

3 oz tempeh, cubed

3 Tbsp BBQ sauce (I used Trader Joe's Kansas City Style)

3/4 cup frozen string beans

Salt and pepper

Directions:

  1. Pierce potato with a fork and microwave on high for 8 minutes

  2. While potato is cooking, heat olive oil in a small frying pan over medium high heat. Add tempeh and brown on all sides, about 3 minutes

  3. Reduce heat to medium low and add half of the BBQ sauce. Continue to cook for another minute, stirring constantly

  4. Remove tempeh from pan and put on a plate. Put string beans in the frying pan and saute for 3 minutes. Add them to your plate

  5. Remove potato from the microwave. Cut in half and save one half for another meal

  6. Spread remaining BBQ sauce on potato and string beans. Add salt and pepper as desired
