Asian Style Beef and Tomato Stir Fry


1 bag Trader Joe's frozen jasmine rice

1 lb beef top round, thinly sliced

1 large yellow onion, sliced

1 tsp chopped garlic

1 lb tomatoes, diced into large pieces

3 tsp corn starch

3 Tbsp Worcestershire sauce

2 Tbsp low sodium soy sauce

2 Tbsp rice wine vinegar


  1. Microwave rice on high for 4 minutes

  2. While rice is microwaving, heat a large heavy bottomed skillet over high heat. Spray thoroughly with cooking spray and add beef. Cook for about 2 minutes and remove from pan

  3. Add onions to the skillet and saute for about 2 minutes. Add garlic and tomatoes and cook for another minute

  4. Whisk together corn starch, Worcestershire sauce, soy sauce, and rice wine vinegar. Add to the skillet along with the beef. Let simmer for another 1-2 minutes until sauce starts to thicken

  5. Spoon 1/4 of the rice and 1/4 of the beef and tomatoes onto a plate. Save the leftovers in Tupperware for up to 5 days
