Turkey, Egg, and Cheese Breakfast Sandwich


2 Trader Joe's Cauliflower Thins

1 egg

2 oz sliced turkey

1 slice light swiss cheese

Hot sauce of your choice


  1. Toast cauliflower thins

  2. Heat a skillet over medium high heat. Spray with cooking spray and crack an egg into the skillet. Sprinkle with a little salt and pepper and let cook for about 2 min.

  3. Flip the egg with a spatula. Top with cheese and cook for one more minute (or longer depending on how runny you like your eggs).

  4. Remove egg from skillet and put on one of the cauliflower thins.

  5. Put the turkey in the skillet and cook for 30 sec on each side

  6. Put the turkey on top of the egg. Add hot sauce to taste. Put the second cauliflower thin on top and cut sandwich in half.
