Mussels in White Wine Sauce


1 lb live mussels, cleaned

1 cup white wine

1 shallot, chopped

1 tsp chopped garlic

1/2 tsp salt

1 Tbsp butter

1 Tbsp chopped parsley

50g crusty bread


  1. Make sure mussels are thoroughly cleaned- check that all beards are removed and there is no debris on the shells. Discard any that aren't fully closed

  2. Heat a large skillet over medium heat. Add wine, shallot, garlic, and salt. Let simmer for 2 minutes

  3. Add mussels, turn heat to high, and cover skillet. Let steam for 4-5 minutes, or until all mussels have opened

  4. Move mussels to a bowl, leaving liquid in the pan. Stir butter and parsley into the wine sauce and then pour over mussels. Serve with crusty bread
