Huevos Rancheros

2 corn tortillas

1 whole egg

1/2 cup egg whites

1/4 cup Trader Joe's Cuban style black beans

2 Tbsp Trader Joe's Pico de Gallo

7g cotija cheese

Cilantro and lime for garnish


  1. Heat a nonstick skillet over medium high heat. Put the tortillas in the skillet and heat 1 minute on each side. Move to a plate

  2. Microwave beans for 1 minute. Evenly divide between tortillas

  3. Turn the stove down to medium. Whisk together the egg and egg whites. Spray the skillet with cooking spray and pour in the eggs. Cook, moving constantly with a spatula, until done

  4. Layer eggs on top of tortillas. Top with Pico do Gallo, cotija, cilantro, and a squeeze of lime
