Chicken Parm Open Faced Sandwich


Ingredients:

1 piece Italian bread

4 oz Trader Joe's grilled chicken

1/4 cup marinara sauce

3 oz mozarella

1 cup arugula

1/4 cup cherry tomatoes

1/2 Tbsp Trader Joe's fat free balsamic vinaigrette

1/4 of a lemon


Directions:

  1. Turn on oven broiler. Put bread in oven and let toast for 2 minutes

  2. Dice chicken and microwave for 30 seconds or until heated through

  3. Top bread with chicken, marinara, and mozzarella. Put in broiler for 4 minutes or until cheese is melted

  4. Put arugula in a bowl. Dice the tomatoes and add to the bowl. Toss salad with balsamic vinaigrette and a squeeze of lemon

  5. Plate the sandwich and salad and enjoy!
